What stayed the same

We only changed the things that made the food better.

What began as a family handi pot is now an open charcoal kitchen. The recipes have not been modernised, only the discipline behind them.

The first menu was twelve dishes written by hand. The current one is larger, but the rules are identical: buy well, cook to order, label honestly and never ask a shortcut to do the work of time.
